Tertiary period palustrine limestone soils.
Angular pebbles and siliceous gravel from the Montagne Noire.
South-facing hillside vines over 40 years old.
The grapes are harvested in slight overripe conditions, early October for Syrah and mid-October for Grenache. A cold pre-fermentation maceration is carried out to extract maximum aromas, followed by a second maceration after alcoholic fermentation to enhance the initial extraction.
Aging potential: 5 – 15 years.
