Cuvée spéciale – Minervois 2012 is brilliant garnet color.
The nose is beautifully complex, blending delicate aromas of red fruits and spices (nutmeg, clove).
The palate is indulgent, offering notes of raspberry and cherry compote, supported by hints of red licorice.
Mineral nuances complement this harmonious profile, leading to a beautiful, lingering finish. A 2012 Minervois that combines indulgence, freshness, and power.

The subtlety of this vintage will pair perfectly with stuffed pigeons, truffled aligot, or a veal chop with mushrooms. For cheeses, we recommend Saint-Nectaire or an alpine Beaufort.

The winemaker’s corner
Pliocene-era river deposit.
Fermentation begins after a brief maceration of each grape variety, followed by a 15-day fermentation with daily punching down or pumping over. Fermentation takes place at a controlled temperature between 26° and 30°. Final blending is done after tasting.
The 2012 vintage was long underestimated in the Minervois. However, its aging reveals very pleasant surprises in the Château de Paraza Cuvées, including this Special Cuvée and the In Vino Veritas.
