The winemaker’s corner

Clay-limestone terroir on the highest slopes of Paraza.

The Syrah grapes are hand-harvested at optimal ripeness in late September. They undergo carbonic maceration at 29°C to enhance fruit aromas. After 25 days, the free-run juice is separated, and the grapes are gently pressed. The remaining Syrah and Grenache are harvested later, between late September and early October, and are vinified traditionally: destemmed, then fermented on skins for 10 to 15 days. The grapes are then pressed and placed in concrete vats to complete malolactic fermentation. Finally, post-fermentation blending takes place, followed by partial aging in French oak barrels.

Cellaring potential: 3–10 years.
