The Winemaker’s corner
Limestone riverbed dating from Pliocene.
The soil is made up of angular stones and siliceous pebbles from the Montagne Noire.
Old vines planted on hills facing south.
The first grape selection is made on the bunches. The grapes are selected and harvested only when over ripped. Carbonic chilled maceration of the varietals begins separately before fermentation at a controlled temperature range of 26-30°, with daily pumping over during 15 days.
